Parmesan Chicken and a Caprese Salad


Tonight was Italian. I love cooking Italian food because it transports me back to the Island of Capri, one of my favorite spots Doug and I stopped at in Italy. One night while on Capri we got dressed up in the only fancy outfits we had {we were backpacking for 2 months and that was all we had room for, one fancy outfit!}. Anyhow, hand in hand we walked the cobblestone streets up to the top of the city where we found this romantic Italian restaurant over looking the entire twinkle lit island and the Mediterranean Sea. There we dined, soaking in the culture every bite of the way...and there we were forever hooked on Caprese Salad.

Dinner tonight consist of Parmesan Chicken over pasta and marinara, Caprese Salad and Garlic bread. Listed below are steps to an easy {transcending} Italian dinner.

Parmesan Chicken:
Cut thawed chicken breast lengthwise in half
Dip into beaten eggs, cover chicken well with eggs
Roll in shredded parmesan
Roll in bread crumbs
In pan melt butter & olive oil to create thin layer on bottom of pan
Place prepared chicken in buttered pan and cook on low/med
Turn often until chicken is fully cooked

Pasta + Sauce:
Fun shaped noodles spice it up! Pick your favorite and follow their cooking directions
Normally I make my pasta sauce but not tonight I bought a fresh tomato basil marinara from our local natural food store.

Caprese Salad:
Fresh Basil {torn into pieces}
Fresh mozzarella balls {cut in halves}
Cherry Tomatoes {cut in halves}
Sea salt {sprinkled}
Crushed Pepper {sprinkled}
Olive Oil {drizzled}
Balsamic Vinaigrette {drizzled}
Layer and served chilled

Garlic French Bread:
Self explanatory :)
